William Harrison Ukers (1873–1945) was the founding editor of the Tea & Coffee Trade Journal. In 1901, 27-year-old Ukers worked as an editor for The Spice Mill, the in-house magazine of the Jabez Burns coffee company. Taking note of a growing trend, he suggested to his boss that the magazine expand to become a trade journal. His boss dismissed the idea, Ukers summarily quit, and the rest is coffee and tea history—literally.
Civilization in its onward march has produced only three important non-alcoholic beverages--the extract of the tea plant, the extract of the cocoa bean, and the extract of the coffee bean.
In this detailed, image-rich reference first published in 1935, William Ukers describes the history, cultivation method and etymology of the world's teas. His research led him to Brazil, Sumatra, Colombia, India, China, Japan, and the ports of Africa, Europe, and the Americas. This edition includes Books I, II and III, which cover the historical, technical and scientific aspects of tea.
This booklet contains 100 encomiums and descriptive phrases applied to the plant, the berry, and the beverage. They range from the poetic like "the most exquisite perfume of Arabia the blest" and "favored liquid which fills all my soul with delight" to the banal like slogans such as "the family drink" or "the King of the American breakfast table" Illustrated with drawings and early coffee ads.
