"Massimo Bottura is the Jimi Hendrix of Italian chefs. . .he takes familiar dishes and classical flavors and techniques and turns them on their heads in a way that is innovative, boundaryâ?breaking, sky kissing, and entirely whimsical, but ultimately timeless, and most importantly, deliciously satisfying." â?? Mario BataliNever Trust a Skinny Italian Chef is a tribute to Botturaâ??s twentyâ?five year career and the evolution of Osteria Francescana, his three Michelin star restaurant based in Modena, Italy, voted number 2 in The 50 best Restaurant Awards 2015. Divided into four chapters, each one dealing with a different period, the book features 50 recipes and stories explaining Botturaâ??s inspirations (including the music and art that motivates him), ingredients, and techniques. Follow Bottura as he pries, pokes and questions the authority of tradition, and in result creates whimsical dishes with a wink such as Memory of a Mortadella Sandwich, Tortellini Walking on Broth, and Oops! I Dropped the Lemon Tart!.Illustrated with specially commissioned color photography by contemporary artists Stefano Graziani and Carlo Benvenuto, and featuring a conversation between Bottura and artist Maurizio Cattelan, Never Trust a Skinny Italian Chef will delight and inspire chefs, Italian food lovers, and fans of creative cuisine alike.
Massimo Bottura is more than a Michelin star-winning chef. Together with Lara Gilmore, he also founded Food for Soul, a non-profit organisation seeking to reduce food waste through inclusion. On the occasion of Expo 2015 in Milan and working in concert with Caritas Ambrosiana, Massimo Bottura opened Refettorio Ambrosiano, a new kind of community canteen where chefs from around the world cooked nutritious meals for socially vulnerable guests using surplus ingredients recovered from the Expo's pavilions. The project's success led Bottura to found Food for Soul in 2016 aimed at replicating the model in other communities. Since then, Refettorio Gastromotiva in Rio de Janeiro, Refettorio Felix in London, Social Tables in Modena, Bologna and Naples, and Refettorio Paris in the French capital have all opened their doors. Further canteens are planned across the globe. This is the ninth essay in the Big Ideas series created by the European Investment Bank.

(In December 2005 Massimo Bottura received his second Michelin star. He also won the Grand Prize at the San Sebastian Chef's Summit). Who better than a chef from Modena to reveal the great possibilities of using balsamic vinegar. And if this chef happens to be one of the most creative on the scene today, the subject becomes even more intriguing. Throughout the pages of this book Massimo Bottura, chef/owner of the Osteria Francescana, shows how this ages-old ingredient is becoming ever more modern. It is commonly used in its liquid form but can also be used as a gelatine; it goes well both with sweet and salty food; in fact, it brings out the best of the other ingredients in all recipes where it is used. In 'Balsamic Vinegar' Massimo Bottura gives us some very new and exciting ideas for a very traditional product.
